Try to mix a short piano sample with a slightly distorted sine wave. Use Lfo's for a wobbly character...
it's not that complicated...

Depends what track you're talking about. I'm pretty sure the melody on The Color of the Fire for instance is a sample of one of those toy guitars where you wind the handle and it plays "Pop Goes the Weasel". One note of that, reverbed and warmed up.
