I can't think of anything else "definitive" at the moment, but I enjoyed watching Nova ScienceNow with Neil DeGrasse Tyson. They have space-themed episodes and other science-y stuff, and it's not too technical at all. The regular NOVA shows have astronomy topics occasionally too.

awesome thread. maybe some of you can help me. back in the day I used to watch a movie made by nasa that included a clip of one of voyager's "fly-by" animations, which are supposedly from real photos from voyager that are then stitched together to become animation. I can find these in short segments on youtube, but am looking for the official full lenght nasa animations for all of the voyager (I and II) fly bys. I love that vintage hue of warmth. amazing.

Also, Universe, I would LOVE to see with my eyes, the supernova of the star Betelgeuse, hopefully in the next few years, and hopefully without the loss of any life in that particular quadrant.
