Definitely Kiteracer 2.
But also:
Over the Horizon Radar
You Could Feel the Sky
Everything You Do Is a Balloon
These tracks just seem to poke at that weird part of the brain. Very emotional.
One small step for man, one giant leap for Wagon Christ.

Corsair!
I can't even describe the crap that track makes me feel.
OTHR (same deal)
Zoetrope. That track is like my life flashing before my eyes. Sometimes I'll get teary-eyed while listening to it.

For me it has always been "Skimming Stones", from AFOT. The first time I heard it, I hadn't paid attention to the title, but for me it was the perfect soundtrack for describing the endless space journey of a Comet. All the sounds denote coldness, immensity, and eternity. And then I saw the title, "Skimming Stones" ! "Heard From Telegraph Lines" would be close behind.

Many of my own choices are already listed above, so I'll add some tunes which I've played to death:
Dave (I'm A Real Traditionalist)
Peacock Tail
Alpha and Omega
Poppy Seed (Reprise)
I never tire of these recordings.
