I'm assuming you'll be driving to Belfast from either Dingle or Donegal? Will you be staying in Belfast?

sort of! Dingle -> Dublin to drop the rental car off, then bus Dublin -> Belfast. we'll have one night in Belfast! we'll be in the cathedral quarter area july 23rd

I was going to say, the Cathedral Quarter is the place to stay/go out in the town. Loads of really nice restaurants and good bars.
For bars, the best in the Quarter are The Spaniard, The Duke of York and The John Hewitt, (or all of them!, they're all just within minutes of each other), then a wee bit further away, The Deer's Head has a good rep, and then on the other side of Royal Avenue are White's Tavern, Kelly's Cellars and The Sunflower. The Ulster Sports Club is the main young folk/hipster music venue in the area as well, if you fancy that.
For food, I haven't been everywhere in the area (and I'm not in town as much as I'd like, so not totally up to date!) but can definitely recommend - for fine dining, The Muddler's Club with a Michelin Star (but book well in advance). Cheaper but decent are The Waterman, Six by Nico or Taylor and Clay in The Bullitt Hotel, or the Mourne Seafood bar by Kelly's Cellars. Again, try and book in advance, but you could be OK mid-week. There's also Common Market for cheaper eating (it's an indoor seating area surrounded by food and drink stalls) and a lot of the bars will do good food as well.
There's plenty more further afield, round the town, but if you don't want to taxi it, a short walking distance in the Cathedral Quarter will get you to all of the above and more, which is more than enough for one night - have a great time!

we’ve been delighted by absolutely everything - the places, the people, the sights to see, the food and drink, just.. everything really! had me looking at visa/residency requirements late one night hahaha

That sounds like a great night! Some of the best bars in Belfast - never been to Madden's but I've heard loads of folk say it's the best Guinness in town. I've many fond memories of nights out in the Duke of York! Really glad you had a good time, you caught a rare spell of good weather as well.

a lot of walking around and getting a sense of the place - was a lot of fun to walk around in! the closes are cool. food, drink, sightseeing etc - the big callout is probably the walk we took from royal mile-ish where we were staying all the way out to Leith to enjoy a meal at The Kitchin (probably the finest of our lives!). after that, we walked the Waters of Leith up until we got tired enough to catch the bus out to Balerno

Assuming I get well enough to eat again, of course. Currently on a very tricky diet after winding up in hospital again. The new drugs didn't quiiiite kick in fast enough and I wound up in so much pain I blacked out. Which was new. Genuinely thought that only happened in movies.

But you know what, fuck it, I am staying positive and all these things will be there for me when I'm well again. I'm currently a terrifying weight and I am going to make the putting it all back on a fun trip of kind of making hay while the sun shines.

Our Siemens iq700 has lasted us through a lot but I'm going to give you the most valuable piece of generic advice on dishwashers you can receive: whatever you get, look at how it's constructed.

The vast percentage of dishwashers are built with a metal inner body on three sides that fastens to a plastic bottom tray. Do not get one of these. They will work fine until one day they leak into their own electronics, or flood your kitchen.

Get one where the bottom surface of the inside of the dishwasher is formed of the same bit of metal as the sides, no join. Thank me later

Yeah easier found in Europe I think although Siemens own Bosch now so possibly your best bet. The construction is the main thing though whoever you get. If it's going to fail which everything eventually does, at least it will be manageable

Ours was expensive (though looking at the prices now, holy shit not that expensive) but it was after the third cheap no name one broke for us and the second flooding we just decided it was a false economy to buy cheap ever again.

Flooding just causes so much damage and in a way that penetrates into the fabric of the room, you never feel right about that room again.
