As far as elder scrolls goes... morrowind was beautiful! even today, the scenery in that game is so awesomely out there, i like it because its not the generic medieval setting... like oblivion. oblivion is beautiful technically, but it doesnt feel as original as morrowind.
Baten Kaitos and Chrono Cross are also beautiful... even if baten kaitos was kind of a piece of crap.
When it comes to nostalgia, ICO is good, but for me its all about Shenmue. Shenmue gives me the best sense of nostalgia out of every game ive ever played. And Japan and China are just so well visually realized, its beautiful in that it is so realistic, and you really do feel like you are visiting a small town in Japan. Amazing.

ikaruga is actually radiant silvergun 2! and its made by the same programmers, a devco called Treasure. they broke away from konami in the early 90's because they wern't happy with the artistic direction konami were taking. their first game was gunstar heroes for the megadrive/genesis. another awesome game.

Where the hell is Silent Hill? Such a pretty game, in a macabre way...The flashlight you have makes everything creepier. In my mind, BoC and SH are both in the same place. Kinda creepy, beautiful, mysterious, and most of all, awesome.
Also, Shadow of the Colossus is AMAZING as everyone else is saying, if you haven't played it, go out right now and get it. There's such mystery and intrigue around the whole game. I CANNOT wait for a sequel, it's the reason I bought a PS3, other than Silent Hill 5 and Oblivion.
